Afternoon Tea for around 40 people

Hello. I am thinking of having an afternoon tea baby shower/birthday party for approximately 40 people on Sunday March 6th. I have around 2 months to plan but I have been looking for ideas of what to bake and for quantities I will need. I'm going to make my own cake stands, because I like to do things nicely, plus it will give me something to occupy my mind for the next 2 months!

Here is a list I have found and adapted, but will edit based on feedback from family/friends.

Sandwiches (mixture of white and wholemeal) with mature cheddar (some with pickle), roast ham (some with salad), smoked salmon and maybe beef (some with horseradish). What do we think of those choices? Egg mayo perhaps?
Plain posh crisps (little dishes of? needed at all?)
Scones with jam and clotted cream
Lemon drizzle cake (I am not keen, so maybe Dad's custard slice in bite size squares instead?)
Chocolate cake (maybe Lex's brownies instead as they can be bite size)
Victoria sponge (maybe cupcakes instead or carrot cake fingers?)
strawberries and cream (unnecessary?)
Tea/coffee (venue will provide)
Glass of Prosecco / pink fizz (only half drinking, due to driving I expect - too expensive maybe, but would be lovely?)

I think the pub venue has 8 tables that will hold 4 sitting each, so I am working on an average of 32 sitting, with some bits spare for those sat at the bar.
